For the Cake:

  • 1 1/2 cups white whole wheat flour (can substitute all purpose flour)
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1 cup vanilla yogurt
  • 3 small very ripe bananas, mashed
  • 1 large egg
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract

For the Glaze Drizzle (optional):

  • 1 cup powdered sugar
  • 3-4 tablespoons milk of choice

Instructions

  1. Preheat the oven to 375F.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the yogurt, mashed banana, egg, oil, and vanilla.
  4. Pour the yogurt mixture into the flour mixture and mix until just combined.
  5. Pour the batter into a greased 8 inch square baking dish.
  6. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.

Notes

  • Don't have white whole wheat flour? All purpose flour can be used as a substitute with no problems at all!
