Ingredients
- ¾ cup Greek yogurt
- 1 teaspoon vanilla extract
- 1 drop liquid stevia
- 2 bananas cut into half inch slices
- 2 tbs coconut shredded
- 1.5 tbs walnuts diced
- 2 tbs mini chocolate chips
Instructions
- In a bowl, combine Greek yogurt, vanilla and stevia and mix to combine.
- Line a cutting board or baking sheet with parchment paper.
- Working in batches, place the sliced banana into the yogurt mixture and carefully coat the bananas. Use a spoon and be careful not to break the banana. Be generous with the mixture.
- Place the yogurt covered banana onto the parchment paper.
- Once all the bananas are covered, top each banana bite with either chocolate chips, walnuts, coconut or any topping of choice. Lightly press the topping into the bite with a spatula..
- Place the cutting board into the freezer for two hours to set.
- To eat, remove the pops from the freezer, and let sit at room temperature for five minutes
Notes
- the type of yogurt you chose will affect the flavor and texture of the frozen yogurt banana bites. Coconut or vegan yogurts do work though (see note in the blog post on how to modify)
- the bananas freeze very solid, let that 3-5 minutes before popping in your mouth
- eat them quickly! The frozen bananas will begin to melt after ten minutes or so in the sun
