Barbacoa Beef

Barbacoa Beef is prepared by searing a beef roast and then slow-cooking it with onion, chipotle chilies or jalapeños, chili powder, and cumin until tender enough to shred. The richly flavored meat can be used in various Mexican dishes such as tacos, enchiladas, and quesadillas, offering a smoky and spicy profile from the peppers and spices.

Description

This Barbacoa Beef recipe begins by searing a beef roast to develop a browned crust that adds depth to the final dish. The seared meat is combined in a slow cooker with chopped onion, chipotle chilies or canned jalapeños in adobo sauce, and a seasoning mix of chili powder, cumin, salt, and pepper. Adding beef broth provides moisture and helps infuse the flavors.

The slow cooking process softens the roast over several hours until it becomes tender enough to easily shred with forks. This method melds the smoky heat of the chiles with aromatic spices, yielding a robustly flavored meat suitable for a variety of Mexican-style meals. The shredded beef carries a balanced heat and richness suitable for tacos, burritos, or as a hearty filling in other preparations.

Once cooked, the Barbacoa Beef can be portioned and stored, making it useful for meal prep. Its versatility allows it to be combined with fresh toppings and sauces to create customized dishes.

Ingredients

Servings
  • 2 1/2 to 3 lb. beef roast (such as chuck, sirloin, rump, etc)
  • 1 large onion (chopped)
  • 4 chipotle chilies or 3 fresh jalapenos, chopped, canned in adobo sauce
  • 2 Tablespoons chili powder
  • 1 teaspoon cumin
  • 1 1/2 to 2 teaspoons salt
  • 1 teaspoon black pepper
  • (1) .5 ounce can beef broth

Instructions

  1. Heat a skillet over high heat. Add some oil to coat the skillet. Place the roast on the skillet (carefully as oil can splatter when hot). Sear on both sides for about 2 minutes.
  2. Place the beef roast, onion, chipotle chilies or jalapenos, chili powder, cumin, salt, pepper, and beef broth in a slow cooker.
  3. Cook on low for about 8 hours or on high for about 5 hours or until tender. After the meat is tender, using two forks, shred the beef.
  4. Use in tacos, enchiladas, burritos, tostadas, quesadillas, on salads, etc.
