Description
This Beef and Barley Soup features cubes of beef stew meat that are first seared to develop a browned exterior and deepen the flavor. The beef is seasoned then cooked with chopped onions until translucent before adding beef broth, pearl barley, and dried thyme. The soup is brought to a boil and then simmered uncovered for an hour, allowing the barley to cook and thicken the broth slightly while tenderizing the beef.
After the initial cooking, sliced celery and carrots are added and cooked for an additional 15 minutes, contributing fresh vegetal notes and textural contrast. The resulting soup is robust and filling, with a combination of tender beef, chewy barley, and lightly softened vegetables. It can be served as a substantial meal, especially in cooler weather.
Ingredients
- 1 tablespoon vegetable oil
- 2 pounds beef stew meat , or cut up chuck roast
- 2 teaspoons kosher salt
- 1 teaspoon black pepper coarse ground
- 1 yellow onion , chopped
- 8 cups beef broth
- 2/3 cup pearl barley
- 2 teaspoons thyme dried
- 3 talks celery , sliced
- 2 carrot sliced
Instructions
- Add oil to a large pot or dutch oven on high heat.
- Season beef with salt and pepper.
- Add to the pot and sear on all sides, about 8-10 minutes.
- Add in the onions and cook for 4-5 minutes, until translucent.
- Add in beef broth, barley, and thyme and bring to a boil, then reduce to low heat.
- Cook, uncovered, for 1 hour.
- Add in the celery and carrots and cook for 15 minutes, then serve.
