Beef Brisket Grilled Cheese Sandwich with Caramelized Onions

This easy Brisket Grilled Cheese is packed with flavor and easy to make with leftover brisket. This sandwich is the ultimate quick and easy lunch or dinner packed with flavor!

Ingredients

  • 8 lices Texas toast (thick white bread)
  • 16 ounces brisket BBQ
  • 8 ounces cheddar cheese or more to taste, shredded sharp
  • 5 tablespoons butter
  • 1 onion thinly sliced, sweet yellow

Instructions

  1. Heat a large skillet over medium-low heat. Melt 1 tablespoon of butter in the skillet then add the sliced onion. Cook stirring occasionally for 8-10 minutes or until the onions are translucent and caramelized.Remove from skillet and set aside.
  2. To assemble each sandwich, butter the outside of each slice with about 1/2 tablespoon of butter. Then pile on cheese, caramelized onions, BBQ brisket, and more cheese.
  3. Heat the pan to medium heat and place each sandwich in. Depending on the size of your pan you may be able to do 1-2 at a time. Cook for 4-5 minutes on the first side (until golden brown) and then flip to cook the other side for about 3-4 minutes. If the sandwich gets brown too quickly, reduce the heat. You will need the heat to be low enough to cook this length of time to ensure the beef brisket is heated through.
  4. Repeat until all sandwiches are cooked. Cut in half to serve. If you have the leftover juices from cooking the BBQ Brisket in the slow cooker, you can serve with the juices to dip in.
