Beet Power Mason Jar Salad

Beet Power Mason Jar Salad is a layered, colorful salad featuring shredded carrot, cooked chopped beets, cooked quinoa, shredded Brussels sprouts, golden raisins, crumbled goat cheese, roasted salted cashews, and baby spinach, all combined with a garlic tahini dressing. The ingredients are packed in mason jars for convenient storage and easy serving by shaking and pouring into a bowl.

Description

This salad combines cooked quinoa as a protein-rich base with earthy beets, crunchy carrots, and shredded Brussels sprouts for varied textures. Sweet golden raisins and creamy goat cheese add contrasting flavors, while roasted cashews provide a crunchy, salty note. The use of garlic tahini dressing ties the flavors with a creamy, slightly nutty taste and a hint of garlic.

The layering in mason jars keeps ingredients separate until serving, preserving freshness and texture. When ready to eat, shaking the jar mixes the dressing and ingredients. This salad is portable and convenient for meal prep or packed lunches.

The recipe requires cooking quinoa, prepping vegetables by chopping or shredding, assembling ingredients in precise order, and refrigeration until serving. The method emphasizes freshness and balance between sweet, savory, crunchy, and creamy components.
