Ingredients
For the Crudite
- radish
- cucumber Persian
- pea pods
- endive
- Flat Bread
- cherry tomatoes baby size
- romesco sauce
For the Beet Tzatziki
- 1 pound beet roasted, peeled and cooled
- 4 garlic finely chopped, cloves
- 2-3 teaspoons lemon juice fresh
- 2 cups Greek yogurt thick, low-fat, organic, Stonyfield
- 1 tablespoon dill finely chopped
- salt Kosher salt and freshly cracked, to taste
- black pepper Kosher salt and freshly cracked, to taste
Instructions
- Grate the roasted beets on the large side of a grater and transfer to a large bowl.
- Add the garlic, lemon juice, yogurt and dill and stir to combine. Taste and season with salt and pepper as needed. Feel free to add extra lemon juice if you want it more acidic. Serve as needed with crudite or flatbread.
Notes
- Definitely make yourself some pita chips, too!
