Belgian Waffles
Description
This recipe combines equal parts all-purpose and whole wheat flour with baking powder and baking soda to create a leavened batter, balanced with salt and light brown sugar for sweetness. Beating eggs with melted butter, buttermilk, and vanilla extract adds richness and moisture.
The wet ingredients fold gently into the dry, careful not to overmix, which helps keep the waffles tender. Cooking in a preheated waffle iron crisps the exterior to a golden brown while maintaining a soft crumb inside. The inclusion of whole wheat flour adds a subtle nuttiness and wholesome texture.
Serve the waffles immediately for best texture, topped with fresh berries, whipped cream, and maple syrup as desired. They are also keep-warm friendly in a low oven until ready to serve.
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3 tablespoons light brown sugar
- 3 egg at room temperature, large
- 1/4 cup butter melted and slightly cooled, unsalted
- 2 cups buttermilk at room temperature
- 1 teaspoon vanilla extract pure
- berries whipped cream and maple syrup, for serving, if desired
Instructions
- Preheat waffle iron according to manufacturer's directions.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and brown sugar. If you have any brown sugar clumps, use your clean hands to unclump the sugar and whisk again.
- In a medium bowl, beat together eggs and melted butter. Stir in the buttermilk and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined. Don't overmix.
- Spray the waffle with nonstick cooking spray. Pour the recommended amount of waffle batter onto the hot waffle iron. Close the waffle iron and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
