Belgian Waffles

Belgian Waffles with Kefir that are perfectly soft on the inside and a bit crispy on the outside.

Ingredients

  • 1 ½ cups (213g) all-purpose flour
  • ½ cup (70g) corn starch
  • 1 tsp baking powder
  • 2 eggs, yolks and whites separated
  • 2 cups (480ml) Kefir
  • 6 tbsp vegetable oil
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp baking soda
  • 3 tbsp sugar

Instructions

  1. Oil your waffle maker (if needed) and pre-heat before using. Oil will prevent batter from sticking.
  2. Add flour, baking powder, and corn starch in a large bowl. Use a sieve to sift the ingredients through to avoid any lumps in the batter (especially baking powder). Mix well. Set aside.
  3. Add the egg yolks to a separate mixing bowl. Beat them a bit with a fork or whisk, then add the Kefir, oil, vanilla extract, salt and baking soda. Mix well.
  4. Beat the egg whites using an electric hand mixer. Once soft peaks form, add the sugar and beat well for a few more minutes until the sugar is dissolved and stiff peaks form. Set aside.
  5. Add the wet ingredients to the dry ingredients and mix together until well-incorporated. Fold in the egg whites into the batter. The egg whites should be mixed well into the mixture, otherwise you will have pockets of thin waffle where the egg white lump was in the dough.
  6. Ladle 1/3 cup portions for each waffle into your waffle maker. Cook the waffles according to your waffle maker instructions. Mine take about 4.5 minutes to get done.

Notes

  • - Use room temperature ingredients if at all possible. This helps the salt and baking soda dissolve better and avoid having random, over-salted parts of waffles.
  • - If you are making the waffles for a crowd, preheat the oven to 200° F (93° C) and place the finished waffles on a sheet in there. This will keep them warm and crispy on the outside, but will not overcook.
  • - My waffle maker needs 4.5 minutes to make 2 waffles. So the cooking time indicated is to cook all the waffles. If your waffle maker cooks faster, you will need much less time to cook all of these.
