A fresh spinach salad with delicious berries hidden throughout. The avocado adds such a delicious and yummy texture and is topped with a creamy raspberry poppyseed dressing!

Ingredients
- 6 ounces baby spinach
- ½ cup sliced strawberries
- ½ cup blueberries
- ½ cup blackberries
- ½ cup raspberries
- 2 died large avocados
- ¼ cup pine nuts
- ¼ cup crumbled Feta cheese
Creamy Poppyseed Dressing
- ½ cup mayonnaise
- ¼ cup 2% milk
- 3 tablespoons granulated sugar
- 4 teaspoons apple cider vinegar
- 2 teaspoons poppyseeds
- ½ cup raspberries
Instructions
- In a large salad bowl, combine 6 ounces baby spinach, ½ cup sliced strawberries, ½ cup blueberries, ½ cup blackberries, ½ cup raspberries, 2 died large avocados, ¼ cup pine nuts, and ¼ cup crumbled feta cheese.
- In a food processor, combine ½ cup mayonnaise, ¼ cup 2% milk, 3 tablespoons granulated sugar, 4 teaspoons apple cider vinegar, 2 teaspoons poppyseeds, and ½ cup raspberries. Pulse until blended smooth and creamy.
- Pour half of the dressing over the salad and toss to coat. Add more dressing if desired.
- Serve immediately and garnish with additional feta cheese and pine nuts if desired.
