Ingredients

  • 6 ounces baby spinach
  • 1 cup coarsely chopped pecans
  • 2 cups chopped Granny Smith Apples, about 2 apples
  • ½ cup crumbled Feta cheese
  • ¾ cup dried cranberries

Creamy Poppyseed Dressing

  • cup mayonnaise
  • ¼ cup 2% milk
  • 3 tablespoons granulated sugar
  • 4 teaspoons apple cider vinegar
  • 2 teaspoons poppyseeds

Instructions

  1. In a large bowl, toss 6 ounces baby spinach, 1 cup coarsely chopped pecans, 2 cups chopped Granny Smith Apples, ½ cup crumbled Feta Cheese, and ¾ cup dried cranberries together.
  2. In a small bowl, whisk together ⅓ cup mayonnaise, ¼ cup 2% milk, 3 tablespoons granulated sugar, 4 teaspoons apple cider vinegar, and 2 teaspoons poppyseeds. Pour over the salad and toss to coat.
  3. Serve salad immediately and garnish with more feta cheese if desired.
