Mixed Berry Cobbler is a delicious, easy recipe with contrasting textures of soft juicy berries and a golden biscuit crust that will just make you want to dive in. This summer dessert is a celebration of fresh berries and ready in just over 1 hour! Gluten free and vegan friendly.

Ingredients
Berry Filling
- 2 cups quartered strawberries hulled
- 2 cups blueberries about 1 pint
- 2 tablespoons granulated sugar
- 2 teaspoons lemon juice
- 3 tablespoons cassava flour or sub 1.5 tablespoons cornstarch
Biscuit Ingredients
- 1 1/3 cups white whole wheat flour or 1:1 Gluten Free Baking Flour
- 1/4 cup granulated sugar
- 1.5 teaspoons baking powder
- ¼ teaspoon fine sea salt
- 5 tablespoons unsalted butter cold and cubed (see notes)
- 1/3 cup plain greek yogurt or skyr cold
- 2 tablespoons milk milk of choice
- 1/2 teaspoon vanilla extract

Instructions
- Preheat oven to 350ºF.
- Prepare filling: Butter the bottom of a 9x9 inch casserole dish, or 2 quart dish. Layer in both quartered strawberries and blueberries. Sprinkle on granulated sugar, lemon juice and cassava flour (or cornstarch). Gently mix to combine and redistribute berries in one even layer. Place in fridge while you prepare the biscuits.
- Make biscuits: In a medium bowl mix together flour, sugar, baking powder and salt. Cut in cold cubed butter using a pastry blender (or use two forks, or a food processor). You want the mixture to resemble a coarse meal. Add in yogurt, milk, and vanilla extract, stirring until just combined. Use your hands at the end as necessary.
- Assemble cobbler: Remove casserole dish from fridge and start to add biscuit dough to top of berries. Take small handfuls of dough and create a round shape, flatten slightly, and space evenly on top of berries. I aim for 7-8 biscuits small biscuits or 5 large biscuits.
- Bake: Place dish in oven and bake berry cobbler for about 40-45 minutes, or until biscuits are golden and berries are bubbling. Allow to cool on counter for 15 minutes before serving. Serve with heavy cream, cool whip, yogurt, a la mode (with ice cream), or just as is. Enjoy!
Notes
- BUTTER - make sure the butter is cold for best results. Vegan or plant-based butter can be used instead.
- STORAGE - store tightly covered with plastic wrap or in an airtight container in the fridge for 3 days.
- REHEAT - rewarm in a low oven (300 degrees F) for 10-15 minutes, until warm.
