Description
This sandwich recipe starts with pan-fried bacon until crispy. The remaining bacon oil is used to cook thinly sliced onions until golden and caramelized, bringing out their natural sweetness. Bread slices are then toasted lightly in the same pan to absorb some flavor.
A chipotle mayo made by mixing mayonnaise with blended chipotle peppers in adobo sauce adds creamy heat and smokiness. The toasted bread is spread with this mayo before adding caramelized onions, bacon, tomato slices, and peppery arugula. The final sandwich is served immediately for optimal texture contrast.
Chipotle peppers in adobo sauce are commonly found in the Mexican section of stores. Both the blended chipotle peppers and the pure adobo sauce can be used depending on heat preference. This sandwich balances savory bacon, smoky mayo, sweet onions, and fresh vegetables for a layered experience.
Ingredients
- 2 lices Bacon
- ½ medium onion sliced thin
- 2 tablespoons mayonnaise
- ½ teaspoon adobo sauce (see notes)
- 2 lices sandwich bread gluten-free, if needed
- 1 small tomato sliced
- ¼ cup arugula
Instructions
- Cook the bacon in a medium-sized pan over medium heat until crispy, about 10 minutes. Remove the bacon from the pan and pour out all but 2 tablespoons of the bacon oil.
- Add the onion to the pan and cook until they are golden brown, about 10 minutes.
- While the onions are cooking, mix the mayonnaise and chipotle peppers in a small bowl.
- Remove the onions from the pan and put the bread into the pan. Let it toast for 1-2 minutes, until lightly golden.
- Spread the chipotle mayo on the toasted bread then top with the caramelized onions, crispy bacon, tomato slices, and arugula. Put the other slice of bread on top then serve right away.
Notes
- Chipotle peppers in adobo sauce can be blended to make the mayo and stored in the fridge for future use.
- Use either the blended chipotle peppers or just the adobo sauce based on your desired spice level.
