Description
The recipe begins by roasting small baby beets wrapped in foil at 350°F for 1 to 1 ½ hours until tender. Salt dissolves in red wine vinegar, then olive oil is whisked in to create a balanced vinaigrette. The beets and lettuce are tossed gently in this dressing to coat thoroughly without bruising the leaves. Crumbled feta adds a salty, creamy contrast sprinkled on top before serving.

Ingredients
- 10 beet small baby
- 1 bibb lettuce
- feta cheese crumbled
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- salt
Instructions
- Clean the beets and leave about 1 inch of the stems. Wrap them in aluminum foil and roast them at 350F for about 1 hour to 1½ hours.
- Remove from foil and allow to cool. Then peel the skin by gently rubbing it off. You can leave them whole or slice them as you prefer.
- In a large bowl, whisk salt and vinegar until the salt has dissolved. Add the olive oil and whisk until all blended.
- Add the beets and the salad to the bowl and gently toss until all the dressing cover the leaves.
- Serve on a plate and sprinkle the crumble feta cheese over it
