Instructions

  1. Combine the sugar, cornstarch, and salt in a small pot.
  2. Add the milk and cook slowly over medium-low heat, stirring constantly with a long spoon or whisk until it thickens and reaches a temperature of 203℉.
  3. Remove the pudding from the heat and stir in the Biscoff spread and vanilla.
  4. Let it cool slightly, stirring occasionally. Then divide the pudding into 4 small serving bowls or glasses.
  5. Push a piece of plastic wrap onto the surface of the pudding to prevent it from getting a skin, and chill at least two hours (ideally four or more) before garnishing with the optional whipped cream and crushed Biscoff cookies.

Notes

  • To make a lightly sweetened whipped cream, whip a quarter to half cup of cold heavy whipping cream sweetened with a tablespoon of white sugar. You can also add some cinnamon or vanilla to the whipped cream for more flavor.
  • Store your Biscoff pudding without whipped cream or Biscoff cookies, in the refrigerator, well-covered, for three to five days.
