A touch of lime and a little cilantro makes this black bean, avocado, cucumber and tomato salad a perfect companion for grilled chicken or steak.

Ingredients

  • 1 cucumber peeled and diced, seedless
  • 2 medium tomatoes diced, ripe
  • 2 avocado diced, Hass variety
  • 15.5 oz can black beans (rinsed and drained)
  • 2 tbsp red onion (minced)
  • 2 tbsp cilantro (minced)
  • 2 lime juice of
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine all the ingredients and season with salt and pepper to taste.
  2. Keep refrigerated until ready to serve.
