Description
This recipe starts by heating olive oil in a pot before cooking frozen or fresh sofrito to release its aromatic flavor. Rinsed and drained black beans and long grain rice are added and mixed well to coat with oil and sofrito. Then a mixture of water, Sazon seasoning, vegetable bouillon, and kosher salt is poured in, infusing the dish with savory and aromatic notes.
The mixture cooks at a boil then is covered and simmered on low heat until the water is mostly absorbed, leaving just enough liquid skimmed at the top. The pot is removed from heat and rested with the lid on to allow steam to finish cooking the rice, yielding a fluffy, tender texture. Fluffing with a fork before serving separates the grains and distributes beans evenly.

Ingredients
- 1 tablespoon olive oil
- 1/4 cup sofrito (I keep this in my freezer)
- 1 black beans rinsed and drained, canned
- 2 cups long grain rice (I like Carolina)
- 3 1/2 cups water
- 1 Sazon seasoning or 1/2 tablespoon homemade sazon, with achiote, packet
- 1 large vegetable bouillon cube such as Maggi, or chicken bouillon cube
- 1 teaspoon kosher salt
Instructions
- Heat a medium heavy pot with a tight fitted lid over medium heat and add the oil.
- Add the sofrito and cook until it melts and becomes fragrant, stirring 3 to 4 minutes.
- Add the rinsed beans and rice and mix well.
- Add the water, sazon, bouillon and salt, stir and let it cook, boiling over medium heat until the liquid is almost all absorbed and just skims the top of the rice.
- Quickly cover the lid and cook low heat 15 minutes.
- Remove from heat and let it sit 5 to 8 minutes more, without lifting the lid so the steam finishes the rice.
- Fluff with a fork and enjoy.
