Blackening Seasoning

Blackening Seasoning is a versatile spice blend that includes paprika, cayenne pepper, onion and garlic powders, black pepper, salt, thyme, and fennel seeds. It is designed to enhance proteins through searing, adding a smoky, spicy crust. The seasoning can be stored for future use and lightly crushed before use to freshen the aroma.

Description

This Blackening Seasoning brings together sweet paprika, cayenne pepper, onion powder, garlic powder, freshly ground black pepper, kosher salt, dried thyme, and gently crushed fennel seeds. The blend is mixed evenly and stored in an airtight container, retaining its potency for up to three months when kept cool and dry.

The seasoning is intended for coating proteins after patting them dry and an application of oil or butter. When cooked by searing, grilling, or baking, it imparts a characteristic darkened, flavorful crust associated with blackened dishes.

Optionally, crushing the spices with a mortar and pestle before mixing can release stronger aromas. This homemade blend offers a controlled and fresh alternative to pre-made commercial blackening spices, suitable for enhancing fish, poultry, or meat with bold seasoning.

Doubling or tripling the recipe is recommended to maintain a ready supply for multiple uses.
