Blender Hollandaise Sauce
Description
Blender Hollandaise Sauce combines the richness of egg yolks with the acidity of lemon juice and the sharpness of Dijon mustard. Blending these ingredients creates a lightened, pale base to which slowly incorporated melted butter adds body and creaminess. The sauce thickens quickly under the blender's agitation, resulting in a velvety texture without separate curdling or breaking. The inclusion of fine sea salt and optional hot sauce or white pepper allows for a balanced flavor profile tailored to the dish it accompanies.
The sauce is served semi-warm due to the blending process but can be gently reheated in a warm water bath or double boiler while stirring to maintain consistency and avoid overheating. Its creamy texture and tangy notes complement dishes such as poached eggs, steamed vegetables, or grilled fish.
Ingredients
- 4 egg yolk
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice fresh
- ½ cup butter melted, unsalted
- sea salt fine, dash
- ¼ teaspoon hot sauce , optional
- white pepper if desired, for dish
Instructions
- Combine egg yolks, Dijon mustard and lemon juice in a blender. Cover, and blend on high for 1-2 minutes. The mixture will blend and start to lighten.
- Reduce blender speed and take out the middle stopped in the center of the lid. Slowly pour in butter in a steady stream while the blender is running. You might get a few spits and spatters.
- Continue to mix until sauce has thickened, which will happen within 1 minute.
- Add salt and optional hot sauce or white pepper, pulse to blend.
- Sauce will be semi-warm from agitation in the blender, but you can heat further by setting the whole blender in large bowl of hot water or place sauce in a double boiler sauce pan on low heat, stirring constantly.
