BLT Lettuce Wraps
Description
This recipe uses large iceberg lettuce leaves as a vessel to hold the classic BLT filling. The first step removes outer leaves for wrapping and shreds an additional leaf to add texture inside. Tomatoes are diced and combined with mayonnaise and fresh black pepper to create a creamy tomato mixture that echoes the sauce in traditional BLTs.
Bacon is cooked until crisp and chopped, then layered inside the lettuce leaves along with the tomato-mayo mix and shredded lettuce. The assembly is rolled gently for an easy-to-eat handheld wrap.
The cold crispness of the lettuce contrasts with the salty bacon and creamy tomato spread for balanced texture and flavor. Adding avocado is optional and contributes richness.
Ingredients
- 4 lices Bacon cooked and chopped, center cut
- 1 tomato diced, medium
- 1 tbsp mayonnaise or whole30 approved mayo, light
- 3 iceberg lettuce large leaves
- black pepper fresh cracked
- 1 ounce avocado add 1 point, optional
Instructions
- Carefully remove 2 large outer leaves of a head of lettuce. If you rip or tear one, just save it for the 3rd leaf you need to shred. Shred the 3rd leaf and set aside.
- Dice tomato and set aside in a bowl.
- Combine diced tomato with mayonnaise and fresh black pepper.
- Place lettuce cups on a plate, top with shredded lettuce. Add tomato then bacon and roll it like a wrap and dig in!
