Blueberry Baked Oatmeal

Blueberry Baked Oatmeal combines rolled oats, mashed ripe bananas, vanilla, and almond milk to create a hearty, tender breakfast bake with a soft set center and a lightly golden top. Fresh or frozen blueberries nestled inside and scattered on top offer bursts of juiciness, balancing the mild sweetness from maple syrup and bananas. This dish holds well in the refrigerator and can be reheated for an easy make-ahead meal that pairs well with nut butter or additional maple syrup for extra richness.

Description

The Blueberry Baked Oatmeal recipe starts with rolled oats mixed with baking powder, cinnamon, and salt for a balanced base. Adding mashed bananas, almond milk, vanilla, maple syrup, flaxseed (or egg), and coconut oil creates a moist batter that bakes into a soft yet set oatmeal cake. Blueberries folded into the batter and sprinkled on top add fresh fruit flavor and a touch of brightness. Baking at 375°F until golden and set ensures a gentle texture without dryness.

Its soft texture, lightly sweetened with natural ingredients and warm spices, makes it a comforting breakfast or snack option. The gentle, moist bake contrasts nicely with any nut butter or extra maple syrup toppings, enhancing its richness.

Leftovers store well for several days refrigerated and can be reheated covered in the oven or microwaved in individual portions, maintaining a moist texture. This makes it convenient for busy mornings or casual meal prepping.
