Ingredients
- 4 cups fresh blueberries
- 1/2 cup white sugar
- 1/2 tsp almond extract
- 1/2 teaspoon vanilla extract
- 1 tbsp lemon juice
Cobbler Topping
- 1 3/4 cup all-purpose flour
- 1/4 cup white sugar
- 4 teaspoons baking powder
- 1/2 cup salted butter softened
- 1 cup milk
- cinnamon
Instructions
- Preheat your oven to 375°F
- Grease a 9x9 baking dish with butter and set aside. In a medium bowl, mix blueberries, sugar, vanilla and almond extracts, and lemon juice, then place into the bottom of the 9x9 pan.
- Cobbler Topping
- In a small bowl whisk together the flour, sugar, and baking powder.
- Cut in the butter with a pastry blender or two forks until the mixture is coarse crumbs.
- Add in the milk stirring until the ingredients are combined. Drop the batter by rounded tablespoons over blueberry mixture like dumplings. Sprinkle a little cinnamon on top.
- Bake in the oven for 30-35 minutes, until the topping is golden brown and baked all the way through, and the blueberry filling is bubbling.
- Remove and cool for 5 minutes before serving. Serve with vanilla ice cream on top.
Notes
- a little nutmeg sprinkled on top is delicious too!
