Ingredients

  • 2.5 fresh peaches
  • 4 small english cucumber
  • ¾ cup fresh blueberries
  • 4 oz goat cheese log
  • 8-10 basil leaves
  • 1 tbsp Jalapeño diced
  • ¼ cup red onion diced
  • 1 tbsp Mike's Hot Honey
  • 1 lime juiced
  • sea salt to taste

Instructions

  1. Wash and dry all produce. 
  2. Finely dice cucumbers, peaches, jalapeño, red onion, and julienne the basil leaves. 
  3. Add all of the fruit and vegetables to a mixing bowl. Add crumbled goat cheese, the juice of one lime, and hot honey.
  4. Toss lightly. Top with sea salt and enjoy!

Notes

  • Since there isn’t any lettuce to get soggy, this salad can be dressed and kept in an airtight container for 3 days. Do note, however, that the cucumbers release a bit of water as they sit, so you’ll want to toss the salad again before consuming.
