Goat Cheese Crostini with Blueberry and Peach Thyme Salsa

Ingredients

  • 1 baguette thinly sliced
  • 2 tablespoons olive oil
  • 4 ounces French goat’s cheese crottin thinly sliced

For the Blueberry and Peach Thyme Slasa

  • 2 peaches seeded and diced
  • 1 cup blueberries
  • 2 tablespoons honey
  • 2 teaspoons fresh thyme leaves
  • Juice of 1 lemon

Instructions

  1. In a large bowl, combine peaches, blueberries, honey, thyme and lemon juice; set aside.
  2. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  3. Place baguette slices onto prepared baking sheet. Drizzle with 2 tablespoons olive oil. Place into oven and bake for 6-8 minutes, or until golden brown.
  4. Add crottin to each baguette slice. Place into oven and bake until melted, about 3-4 minutes.
  5. Top each baguette slice with blueberry-peach mixture.
  6. Serve immediately.
