These blueberry lemon overnight oats are the perfect healthy way to start your day! They're so easy to make, full of sweet, bright flavors, and are the perfect grab-and-go meal for busy mornings. You won't be able to resist these creamy and zesty overnight oats.

For the Blueberry Layer

  • 2⅓ cup frozen blueberries
  • 3 tablespoons maple syrup or sugar

For the Overnight Oats

  • 2 cups milk
  • 1 cup Greek yogurt ideally lemon flavored yogurt
  • 2 cups rolled oats
  • 4 tablespoons chia seeds
  • 4 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • Zest of 1 lemon

Instructions

  1. Add the blueberries and maple syrup to a saucepan and cook over medium heat. Stir and mash as the blueberries release their juices and breaks down into a saucy consistency. Cook for 10 to 20 minutes, depending on how chunky you'd like the sauce to be. Set aside and allow it to cool before storing in the fridge.
  2. Combine the milk, Greek yogurt, rolled oats, chia seeds, maple syrup, vanilla extract, salt, and lemon zest and stir until well combined.
  3. Cover with a lid or plastic and refrigerate for at least 3 hours or overnight.
  4. When the overnight oats have set, divide the blueberry sauce between four jars and then stir the overnight oats and add on top. Add in your favorite toppings such more lemon zest and fresh blueberries.
