Blueberry Peach Oatmeal

Blueberry Peach Oatmeal blends rolled oats cooked with fresh peaches, blueberries, vanilla, and cinnamon in water until creamy. Topped with extra fruit, ground flaxseed, and almond butter, it offers a warm, fruity breakfast with a mix of soft textures and mild sweetness. This oatmeal incorporates the natural flavors of peach and blueberry while adding nutty richness from the almond butter.

Description

The recipe begins by combining rolled oats, water, half of the chopped peaches and blueberries, vanilla extract, and cinnamon in a saucepan. Cooking over medium heat thickens the oats as the fruit softens and releases flavor into the mixture. This results in a creamy oatmeal base infused with warm spice and fruit notes.

After cooking, the oatmeal is served with the remaining fresh peaches and blueberries on top, along with ground flaxseed and a spoonful of almond butter or another nut butter. This layering adds fresh bursts of fruit and a slight crunch from the flaxseed, plus a creamy, rich finish from the nut butter.

The recipe suggests flexibility with ingredients based on season and preference. Frozen fruit can be used when fresh is not available, and milk can substitute water for added creaminess. The vanilla and cinnamon add warm aromatic accents, while flaxseed provides gentle nuttiness or can be swapped with chia seeds.

Ingredients

Servings
  • ½ cup rolled oats old fashioned
  • 1 cup water
  • 1 cup peach chopped into small chunks and divided, fresh
  • ½ cup blueberries divided, fresh
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • ½ Tablespoon Flaxseed ground
  • 1 Tablespoon almond butter or other nut butter

Instructions

  1. Add oatmeal, water, 1/2 cup peaches, 1/4 cup blueberries, vanilla and cinnamon into a small saucepan.
  2. Cook over medium heat for 5-10 minutes or until oatmeal has thickened and is the consistency you like.
  3. Spoon into a serving bowl. Top with remaining peaches, blueberries, ground flaxseed and nut butter. Enjoy!

Notes

  • Use fresh peaches and blueberries in summer; frozen fruit can be thawed and used in colder months.
  • Any type of milk may be substituted for water to achieve creamier oatmeal.
  • Ground flaxseed adds nutrition and texture but can be omitted or replaced with chia seeds.
  • Try different nut or seed butters if almond butter is unavailable or for variety.
