These homemade Blueberry Waffles are moist and tender on the inside, with a thin crisp outside. Flavorful with butter and buttermilk, plus pops of sweet, juicy blueberries and a touch of bright lemon, this easy waffles recipe is destined for breakfast, lunch, and dinner!

Ingredients
- 1½ cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon Morton kosher salt
- 1½ cups buttermilk
- 2 large eggs
- ½ cup unsalted butter melted and cooled
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon fresh lemon zest
- 1 cup fresh blueberries plus more for garnish
Instructions
- Preheat waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk the buttermilk, eggs, melted butter, lemon juice, and lemon zest.
- Add the wet ingredients to the dry and mix just until no large lumps of flour remain. Do not overmix.
- Gently fold in the blueberries.
- Grease waffle iron with melted butter or nonstick cooking spray and then add a scant cup of batter to the center of the iron.
- Cook for 3-4 minutes, or until the waffle is golden brown to your liking. Repeat with the remaining batter.
Notes
- To keep waffles warm (if you want to prepare all the waffles and then eat them all at the same time), place them on a cooling rack set over a baking sheet. Place in a 250° F oven for up to 30 minutes.
