Boozy Watermelon Lemonade

Boozy Watermelon Lemonade blends fresh watermelon and cucumber with lime and pineapple juice, enhanced by mint and a choice of rum or vodka. The mixture is pureed, strained, and chilled before serving with ice and garnish, creating a refreshing summer drink that balances fruity sweetness with citrus brightness. Adjust sweetness with syrup and serve over ice for a cool beverage suitable for gatherings or relaxing warm days.

Description

Boozy Watermelon Lemonade combines watermelon chunks, cucumber, fresh lime juice, mint leaves, and pineapple juice, blended and strained for a smooth, refreshing base. The addition of white rum or other spirits balances the natural sweetness and tartness of the fruits. The simple syrup is added gradually to reach the right level of sweetness, and chilling the drink beforehand enhances its crisp, cooling qualities.

The drink’s flavor is bright and fruity, with the cucumber adding a mild freshness and mint leaves infusing subtle herbaceous notes. Serving it with slices of lime and cucumber alongside mint sprigs provides an inviting presentation and added aroma.

For serving, keep it cold with ice and garnish each glass just before pouring. This recipe allows for alcohol-free versions by substituting water for rum, making it versatile for all guests. Using chilled fruits before blending helps minimize dilution from ice, preserving the drink’s flavor and texture.

Ingredients

Servings
  • 2 1/2 pounds watermelon seeds removed and cut into chunks, flesh
  • 1/4 English cucumber cut into chunks
  • 1/4 cup mint leaves packed
  • 1 cup lime juice or lemon juice, fresh
  • 1 cup pineapple juice
  • 2 1/2 cups white rum coconut rum, vodka, or water for non-alcoholic
  • 1/2 cup simple syrup or agave syrup for low calorie

Garnish:

  • mint leaves
  • cucumber sliced
  • lime or lemon slices, slices

Instructions

  1. Add watermelon chunks, cucumber, lime juice, and mint to a blender, and puree until the mixture is smooth.
  2. Strain the mixture into a pitcher to remove any pulp and small pieces of leaves.
  3. Mix in the alcohol or water, and pineapple juice.
  4. After that, stir in the syrup a little at a time, to get to your desired sweetness level. Stir well to combine.
  5. For best results, refrigerate for at least one hour before serving, so the drink is chilled.
  6. Before serving, add the lime, cucumber slices, and some ice.
  7. Pour into glasses and garnish with a sprig of mint. Serve.

Notes

  • Chill watermelon and cucumber before blending to keep the drink cool without too much ice.
  • Substitute rum with coconut rum, vodka, or water to vary alcohol content or make a non-alcoholic version.
  • Store leftover lemonade chilled and stir before serving as ingredients may settle.
  • Freeze the mixture into ice cubes for an extra refreshing serve that won’t dilute the flavor.
  • For larger gatherings, double or triple the recipe and prepare alcohol-free and alcoholic versions separately to accommodate all guests.
  • If fresh watermelon is unavailable, watermelon juice from the store can be used though the flavor will differ slightly.
