  • 1 ½ pounds medium whole carrots, peeled, with the leafy tops trimmed to about 1-2 inches
  • ½ cup (1 stick / 113 g) unsalted butter, melted
  • ½ cup (4 ounces) bourbon
  • cup (67 g) light brown sugar, packed
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Parsley, chopped for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Arrange the carrots in a single layer in a large, shallow baking dish.
  2. In a small bowl, whisk together the melted butter, bourbon, brown sugar, salt, and pepper until smooth.
  3. Pour the sauce evenly over the carrots, ensuring they are coated. Arrange them in an even layer.
  4. Roast the carrots for 45-55 minutes, turning them occasionally to recoat them in the sauce, until the carrots are tender. (Depending on the size of the carrots, you may need to adjust the cooking time.)
  5. Remove the dish from the oven and transfer the carrots to a serving platter.
