Honey Glazed Carrots are quick and easy vegetable side dish that elevates humble carrots into a glistening sweet and savory masterpiece. Ready in 30 minutes, serve these as part of weeknight dinner or gorgeous holiday spread - with the option to make ahead!

Ingredients
- 3 tablespoons honey
- 3 tablespoons olive oil
- 2 medium cloves garlic minced
- ½ teaspoon fine sea salt
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cinnamon
- 2 pounds carrots peeled and sliced diagonally 1” pieces
Instructions
- Preheat oven to 400ºF and line a baking sheet with parchment paper; set aside.
- Make honey glaze: In a small bowl whisk together honey, olive oil, garlic, salt, ginger and cinnamon until well combined.
- Toss with glaze: Add sliced carrots to large bowl and toss with honey glaze mixture until evenly coated. Transfer carrots onto lined baking sheet, making sure to get all of the glaze from the bowl onto the carrots.
- Bake: Spread carrots evenly in a single layer on baking sheet and bake for 20-25 minutes, until golden. If your oven has a convection setting, you can use that for the last 5 minutes, or broil for 2-3 minutes for a more carmelized coating.
- Serve: Feel free to add fresh thyme or parsley upon serving.
Notes
- MAKE AHEAD - Prep and bake carrots as directed. Once cool, transfer to an oven-safe baking dish, cover with foil and store in the fridge for 1-2 days. When ready to serve, pop the dish in a preheated 350-degree oven for 15-20 minutes, or until warmed through.
- STORAGE - Store in an airtight container in the fridge for up to 4 days. Reheat individual portions in 30-seconds increments in the microwave.
