Description
The filling features meat from cooked sausages combined with softened red onion and bell pepper sautéed until tender. Fluffy scrambled eggs mixed in add a mild, creamy texture. Assembling the fillings slightly off-center in large tortillas makes wrapping easier. Frying the rolled burritos briefly gives the tortillas a crisp, browned finish that contrasts with the soft interior. The burritos can be served immediately or stored frozen for later use.

Ingredients
- 1 tablespoon olive oil
- 400 g sausages (meat removed from casing)
- 4 tortilla wraps
- 1 red onion finely chopped
- 1 bell pepper finely chopped
- 4 egg whisked
- 1 avocado sliced
- 200 g refried beans
- 100 g salsa
- 60 g cheddar cheese grated, mature
Instructions
- Remove meat from 400 g Sausages and fry until cooked. Set aside.
- Heat 1 tablespoon Olive oil in a pan and fry 1 Bell peppers and 1 Red onion until softened.
- Add 4 Eggs and stir continuously until the egg is cooked.
- Lay out 4 Tortilla wraps. Assemble your burrito by dividing 200 g Refried beans between them then the cooked sausage. Place your filling slightly off centre to make rolling easier.
- Add the vegetable scramble, 100 g Salsa and slices of 1 Avocado.
- Top with 60 g Mature cheddar.
- Roll into a burrito (see the video for how to roll a burrito) and fry lightly until the tortilla is browned.
Notes
- Use tortillas at least 12 inches in size to easily wrap the filling; smaller tortillas can be used to make breakfast tacos.
- Keep tortilla wraps sealed in their package until right before assembling to maintain softness and ease of rolling.
- Fold burritos by tucking sides before rolling to secure the filling effectively.
- Use gluten-free tortillas and sausages to make the recipe gluten-free.
- Cook eggs gently to prevent dryness and maintain creamy texture in the filling.
