Breakfast Burritos
Description
To prepare the filling, hash browns are cooked in butter seasoned with salt and pepper until lightly browned. Ground pork sausage is browned in a skillet, then diced ham, onion, and red bell pepper are added and cooked until tender. Green chiles and eggs are incorporated and cooked until the eggs are fluffy and fully set. The cooked hash browns are added back into the mixture and seasoned as needed.
The burrito sauce combines mayonnaise (or sour cream), hot sauce, lime juice, cumin, chili powder, and garlic powder for a flavorful spread applied to the flour tortillas before filling. Each tortilla is filled with the hash brown and egg mixture and shredded cheddar cheese, then rolled tightly to enclose the filling.
These breakfast burritos can be served immediately with salsa or hot sauce for added flavor. The recipe notes mention that they can be air fried at 350°F for 5 minutes if thawed or 8-10 minutes if frozen, providing a way to reheat or finish the burritos with a slightly crisp exterior.
