Breakfast Casserole
Description
Combining diced bacon cooked until nearly done with sautéed onion and green bell pepper, this casserole mixes these flavorful ingredients with frozen shredded potatoes, melted butter, eggs, shredded cheddar, and cottage cheese. The mixture is thoroughly combined then baked uncovered in a 9x13 dish for about an hour until set and golden on top. The dish features a rich, dense texture from the potato and cheese blend alongside savory bursts from bacon and vegetables.
This casserole can serve a group for breakfast or brunch, delivering protein and comforting textures. The combination of cottage cheese and cheddar contributes creaminess and a mild tang, harmonizing with the saltiness of the bacon. The method ensures an even bake through generous cooking time at moderate temperature.
