Ingredients
For the Pancake Board
- Pancakes see recipe below, plus crepes, silver dollar pancakes etc...
- 3 cups Fresh fruit (berries, melon, banana etc...)
- 1 cup extra toppings (chocolate chips, coconut, nuts, sprinkles)
- Nutella Dip or other dips or yogurt
- maple syrup
For the Perfect Buttermilk Pancakes
- 2 cups all-purpose flour (plain flour) 250 g
- 1 tablespoon sugar
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 2 cups buttermilk 480 ml (or milk with 2 teaspoons lemon juice stirred in)
- 2 eggs
- 3 tablespoons butter melted
- ½ teaspoon vanilla
- oil for frying
Instructions
For the Pancake Board
- BOARD: Get a board/platter/serving tray. Something large enough for all your guests that has a food-safe surface.
- FRUIT: Prep all the fruit - ensure it's ripe, cut and ready to eat.
- TOPPINGS & DIPS: Prepare the toppings and dips. Whip up any dips you want to include and gather some maple syrup or any other syrups. Where necessary, put into small bowls or jugsTip: small glasses or vintage teacups work well if you don't have little bowls.
- COOK: Cook the pancakes, crepes etc... If including eggs, sausages or any other breakfast foods, then start cooking them now.
- ASSEMBLE: Put the pancake board together. Start with the largest items and place them onto your tray decoratively. Work your way through all your fruit and toppings, grouping them together until it's piled high and full.
Fluffy Buttermilk Pancakes
- Add the flour, sugar, salt, baking soda and baking powder to a mixing bowl and whisk.
- Add the buttermilk, eggs, melted butter and vanilla to a jug and whisk until smooth.
- Pour the buttermilk mixture into the dry ingredients and gently stir to combine. TIP: Don't overmix or the pancakes won't be as fluffy. It's okay to have lumps in the batter.
- Heat a little oil in a frying pan over medium-low heat.Add ⅓ cup (80 ml) of batter to the pan and cook until bubbles form on the top, then flip and cook until the other side is golden.
- Repeat until the batter is all used up.
Notes

- Make sure you have a big selection. An assortment of ingredients is what makes a pancake charcuterie board special.
- Layer the ingredients in rows and piles. I love a graphic look.
- Group ingredients together so people don't have to hunt around the board for the last strawberry.
- If you're feeling extra fancy, go on and warm up the maple syrup. It's soooo good warm on fresh pancakes.
- Ensure a good distribution of colour around the platter - don't place the strawberries, watermelon and raspberries next to each other, leaving the beige items grouped on the other side.
- Prep the fruit ahead of time so it's all ready to assemble when the pancakes are ready.
- Be sure to have lots of colourful items. Pancakes are all beige so pops of colour from fruit and dips work well.
- Make sure it's all ready to eat. I chop bananas and peel fruit where necessary.
- For a fun twist, use some wooden skewers and alternate fruit and pancakes on sticks.
- Small bowls work well to display little items like nuts and chocolate chips.
- Make sure to add spoons for any dips. Cocktail sticks are great too so people can help themselves, hands-free.
- Place tongs or serving spoons next to the board so people don't have to use their hands. A little stack of napkins is useful too.
