  • 2.5 - 3 pounds sweet potato peeled and cut into 2-inch chunks
  • 1 teaspoon salt
  • 2 cups orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon rosemary chopped, fresh
  • 1 1/2 cups brown sugar
  • 1/2 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 6 tablespoons butter

Instructions

  1. Place the sweet potato chunks in a large pot and cover with a couple of inches of cold water. Add the salt and bring to a boil. Boil for 7-10 minutes or until they start getting tender but not fully cooked. Drain and set aside.
  2. Mix the remaining ingredients in a large sauté pan and bring to a boil on high heat. Cook until the sauce reduces to a syrup.
  3. Preheat oven to 400 degrees F.
