Ingredients
- 8 tablespoons salted butter
- 6 oz. bittersweet chocolate bars , chopped
- 4 oz. semisweet chocolate bar , chopped
- ¾ cup granulated sugar
- 3 eggs , at room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon kosher salt
- 1 cup chopped Oreo cookies
- ½ cup chocolate chips

Instructions
- Preheat oven to 350°F. Choose a high-sided oven-safe skillet to bake your brownies in and spritz with nonstick baking spray. (I used a 8” cast iron skillet.)
- Melt the butter in the skillet over medium heat on the stovetop. You may also do this in a bowl in the microwave.
- When melted, turn down the heat to low.
- Stir in the chopped chocolate, stirring constantly until completely melted.
- Turn off the heat. Measure in the sugar, stirring with a rubber spatula until combined. Let cool for 5-10 minutes.
- Break the eggs in a separate bowl. Measure the vanilla into the bowl with them. Whisk with a whisk or a fork until combined.
- Temper the egg mixture with a spoonful of the chocolate mixture, stirring vigorously to combine and warm up the eggs to where they do not scramble in the brownie mixture.
- Pour the egg-vanilla mixture into the skillet, stirring vigorously to incorporate all the wet ingredients.
- Add the flour and salt to the skillet, stirring until just combined.
- Next, add the chopped Oreos and chocolate chips and fold to incorporate into the batter.
- Transfer the skillet to the preheated oven, and bake for 30-35 minutes or until cooked through. (If you're a fan of gooey brownies, check this around the 25-minute point.)
- Top with your favorite garnishes, and enjoy warm straight out of the oven!
