Description
In this Bruschetta Chicken recipe, chicken breasts are first marinated in Italian dressing to help tenderize and impart flavor. The topping combines fresh cubed tomatoes, olive oil, and basil, which mimic traditional bruschetta ingredients. Shredded mozzarella cheese is added over the chicken before topping it with the tomato mixture. Baking at 350°F for 40 to 45 minutes allows the chicken to cook through while melting the cheese and warming the tomato topping.

Ingredients
- 4 chicken breast
- 1 c Italian dressing
- 3 tomato cubed
- 1-2 TB olive oil
- 1 tsp basil
- 1 c mozzarella cheese shredded
Instructions
- Marinate chicken breasts in Italian Dressing for several hours.
- Preheat oven to 350.
- Combine cubed tomatoes, olive oil and basil in a bowl and mix well.
- Place chicken breasts on a foil-lined cookie sheet. Add desired amount of mozzarella cheese on top of the chicken breasts (we added about a few TB to each breast). Top with a few tablespoons of the tomato mixture.
- Bake for 40-45 minutes.
