Buffalo Shrimp Kale Salad

Fantastic buffalo hot sauce shrimp top this healthy kale salad. This is a salad you are happy to eat!

Ingredients

Servings
  • 1 pound Shrimp peeled and de-veined, giant tiger variety
  • 1 tablespoon olive oil
  • ¼ cup buffalo sauce
  • 4 cups kale ribs removed and shredded into small pieces
  • 1 cucumber sliced
  • 1 tomato sliced
  • 1 talk celery diced
  • 1 ½ cup mozzarella cheese sliced
  • 2 tablespoons ranch dressing

Instructions

  1. Rinse the shrimp and pat dry with a paper towel.
  2. Place olive oil and shrimp in a skillet and cook on medium high heat, stirring often, until the shrimp have turned pink.
  3. Pour in the buffalo sauce and cook until slightly thickened.
  4. Remove the skillet and set aside.
  5. Divide the kale between two plates, top with celery, cucumber, and tomatoes.
  6. Place shrimp on top, drizzling the extra sauce on top if wanted.
  7. Place cheese on top and finish by drizzling salad dressing over the salad.
