Bún Thịt Nướng consists of sliced pork shoulder thinly cut and marinated with a blend of minced shallots, garlic, sugar, fish sauce, thick soy sauce, black pepper, and cooking oil. The marinated meat is baked and then broiled to achieve a golden-brown color, developing caramelized edges. Rice noodles provide a tender base layered with fresh green leaf lettuce, Vietnamese herbs including mint, perilla, and balm, and crisp cucumber slices. Pickled carrots and daikon add acidity and crunch.

Flavored with a prepared fish sauce dipping sauce, the dish balances savory, sweet, and sour notes while combining grilled meat with fresh herbs and pickled vegetables. It is served as a composed bowl, where diners can mix ingredients or enjoy bites separately.

Ingredients

  • 1.5 .5 lb pork shoulder sliced (any cut will do)
  • 1 package rice noodles small or medium thickness
  • 4-6 Egg rolls optional

Marinade

  • 3 tbsp shallot minced
  • 1.5 .5 tbsp garlic minced
  • 1/4 /4 cup sugar
  • 1 tbsp fish sauce
  • 1/2 /2 tbsp soy sauce thick
  • 1/2 /2 tbsp black pepper
  • 3 tbsp neutral cooking oil

Vegetables

  • green leaf lettuce
  • mint rau thơm
  • Vietnamese perilla tiá tô
  • Vietnamese balm kinh giới
  • cucumber sliced

Garnish

  • daikon pickled; Vietnamese name đồ chua
  • carrot pickled; Vietnamese name đồ chua
  • 1/2 /2 tbsp scallion in oil; Vietnamese mở hành
  • 1/2 /2 tbsp peanuts crushed

Dipping Sauce

  • fish sauce aka nước chấm; prepared

Instructions

  1. Slice the uncooked pork thinly, about 1/8". It helps to slightly freeze it beforehand.
  2. Mince garlic and shallots. Mix in a bowl with sugar, fish sauce, thick soy sauce, pepper, and oil until sugar dissolves.
  3. Marinate the meat for 1 hour, or overnight for better results.
  4. Bake the pork at 375 F for 10-15 minutes or until about 80% cooked. Finish cooking by broiling in the oven until a nice golden brown color develops, flipping the pieces midway. Don't take your eyes off the broiler!
  5. Assemble your bowl with veggies, noodles, and garnish. Many like to mix the whole bowl up and pour the fish sauce on top, but I like to make individual bites and sauce it slowly.
