This crunchy cabbage and arugula salad is creamy, naturally sweet, and has a lovely nutty bite from arugula. It's seasoned with mayo and curry powder to bring all the flavors together!

Ingredients
- 8 Luna sweet cocktail tomatoes or mini tomatoes, quartered 240 grams
- ¼ of a small white cabbage, finely shredded and core cut out. 320 grams
- 2 cups arugula lettuce 55 grams
- 1 cup bread and butter chips. quartered 163 grams
- ½ cup crumbled Feta cheese 65 grams
- 3 tablespoons mayonnaise
- 1 teaspoon curry powder
- salt and black pepper to taste optional
Instructions
- Add the vegetables, bread and butter chips, and cheese in a large serving bowl. Toss to mix.
- Whisk the mayonnaise with curry powder in a small bowl.
- Pour the curry mayo over the salad and toss well to coat all the ingredients—season with a pinch of salt and black pepper to taste (optional).
- Serve and enjoy! Best to let it sit for a few minutes at room temperature to let the flavors melt.
