Cacik Turkish Yogurt Dip

Cacik is a Turkish yogurt-based dip made from strained yogurt combined with finely chopped baby cucumbers, garlic, fresh mint, and a drizzle of olive oil. It offers a creamy texture with a refreshing, mild cucumber flavor accented by the aromatic herbs and garlic. Typically served chilled, this dip is a cool accompaniment to many meals or can be thinned to make a light soup.

Description

This Cacik recipe uses thick, strained Turkish or Greek yogurt as a base, blended with a small amount of water to achieve a creamy, smooth consistency. Baby cucumbers are chopped into small pieces rather than grated to prevent excess moisture, maintaining a firm texture in the dip. Garlic and fresh mint are added for aromatic and savory notes, rounded out by salt and a finishing drizzle of olive oil.

The flavor is cool and herbaceous, with a balance between the tangy yogurt, the sweetness and crunch of cucumbers, and the depth of garlic and mint. While traditionally served chilled as a condiment or side dish, cacik can be diluted with additional water to create a refreshing cold soup to enjoy on warm days.

For best taste, prepare cacik a few hours in advance and keep chilled until serving. Leftovers can be stored in the refrigerator for up to 48 hours; stirring before serving is recommended due to some water release from cucumbers.

Ingredients

Servings
  • 560 grams yogurt (2 cups) strained, Turkish or Greek
  • 1 tablespoon water
  • 3 cloves garlic
  • 2 baby cucumbers or ½ a regular English cucumber
  • salt to taste
  • 5 leaves mint chopped, fresh
  • olive oil to drizzle

Instructions

  1. In a medium bowl, beat the yogurt and water till creamy and smooth.
  2. Chop the cucumbers into small pieces and mince the garlic, then add to the yogurt. Add salt and mix well.
  3. Stir in the chopped mint and drizzle with olive oil. Cover and chill till required.

Notes

  • Use small baby cucumbers (Persian cucumbers) for best flavor and texture; if unavailable, half a regular English cucumber works.
  • Chop cucumbers instead of grating to avoid excess water in the dip.
  • Make the dip a few hours ahead and keep it chilled for best freshness.
  • Leftover cacik can be stored in a sealed container for up to 48 hours; stir well before serving.
  • To turn cacik into a cold soup, mix with about half a cup of cold water before serving.
