  • 1 yellow cake mix 15 1/4 ounces
  • 3 banana mashed (about 1 1/3 cups, large, ripe
  • 3 tablespoons vegetable oil
  • 2 1/2 tablespoons applesauce
  • 2 egg large
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F. Grease a metal 9x5-inch loaf pan.
  2. In a large bowl, combine the yellow cake mix, mashed bananas, vegetable oil, applesauce, eggs, and cinnamon. Stir until just combined; do not overmix.
  3. Pour the batter into the greased loaf pan, smoothing the top with a spatula.
  4. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If needed, cover the loaf with foil during the last 15 minutes of baking to prevent it from becoming too brown.
  5. Allow the bread to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
