Camarones Guisados [Video + Recipe] Stewed Shrimp a la Criolla

Camarones Guisados is a stewed shrimp dish cooked with olive oil, tomatoes, bell peppers, garlic, and tomato sauce. The shrimp are simmered in a flavorful, gently spiced tomato-based sauce until bright pink and tender. The dish offers a savory, slightly tangy seafood entrée with a rich, saucy texture that highlights the shrimp and fresh vegetables.

Description

This version of Camarones Guisados involves cooking diced plum or cherry tomatoes with bell peppers and crushed garlic in olive oil over low heat until the vegetables soften. Tomato sauce and water are added to form a stew base. Large peeled shrimp are then added and cooked until they turn bright pink, indicating doneness. Salt and freshly ground black pepper season the dish to taste.

The slow cooking of the vegetables in olive oil develops a soft, flavorful sauce with sweetness from the tomatoes and aromatic depth from garlic and peppers. The shrimp absorb the sauce flavors and retain a tender texture. The result is a homey seafood stew with vibrant color and balanced savory taste.

Camarones Guisados can be served on its own or accompanied by plain rice to soak up the sauce, making it suitable for a satisfying seafood meal with fresh, simple ingredients.
