Description
This traditional Camote Enmielado recipe uses whole large sweet potatoes cooked in water with piloncillo (or dark brown sugar), a cinnamon stick, star anise, and a whole clove. The mixture is brought to a boil and then simmered covered for about 50 minutes, allowing the sweet potatoes to become tender and the syrup to infuse with aromatic spices. After uncovering, the syrup is reduced further to thicken and intensify the flavor before cooling slightly.
The final presentation sees the soft sweet potatoes served in bowls with generous spoonfuls of the rich, spiced piloncillo syrup poured over them. The syrup's warm notes from cinnamon, anise, and clove complement the natural sweetness and soft texture of the sweet potatoes, creating a deeply satisfying dessert.
Camote Enmielado can be enjoyed as a snack or dessert and benefits from using Ceylon cinnamon for a milder, sweeter cinnamon flavor, though Cassia can be substituted. Star anise adds a distinctive aroma but may be omitted if unavailable.
Ingredients
- 4 large sweet potato scrubbed and rinsed (or 6 small-medium
- 8 ounces piloncillo (or 1 cup dark brown sugar)
- 1 cinnamon stick (Ceylon cinnamon preferred)
- 1 star anise pod
- 1 clove whole
- 2 cups water
Instructions
- In a large pot or Dutch oven, add the sweet potatoes, piloncillo, cinnamon stick, star anise pod, clove, and water. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 50 minutes.
- Uncover and give the liquid a quick stir. The piloncillo should be completely melted by this point.
- Leave uncovered and continue simmering on low for another 15-20 minutes to reduce the syrup.
- Remove from heat and let the camotes sit for 10 minutes to cool down. The syrup will also thicken slightly.
- Transfer a sweet potato to a bowl, pour some piloncillo syrup on top, and dig in!
Notes
- If piloncillo is unavailable, substitute with 1 cup of dark brown sugar to maintain sweetness.
- Ceylon cinnamon is preferred for its milder flavor; Cassia cinnamon can be used as an alternative.
- The star anise adds aroma but can be omitted without significantly altering the dish.
- Let the camotes sit after cooking to allow the syrup to thicken and flavors to meld before serving.
