Ingredients
- 2 large sweet potato cubed

- 1/4 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 2 cups mini marshmallows
Instructions
- Preheat oven to 375 degrees.
- Toss the sweet potatoes, butter, brown sugar, salt, cinnamon, nutmeg and ginger together in a large bowl.
- Add the mixture to a 9x13 baking dish and cover with foil pan.
- Cook for 30 minutes.
- Uncover and stir sweet potatoes gently.
- Cook an additional 20 minutes uncovered.
