Canestreletti
Description
Canestreletti combines flour, sugars, butter, egg yolks, and lemon zest to create a rich dough that is chilled briefly before shaping. After resting, the dough is rolled to about one-quarter inch thickness and cut into preferred shapes. Brushing with egg white before baking imparts a gentle gloss and helps the cookies brown evenly. A short bake at 375°F results in crisp edges with a tender center. Once cooled, a generous sprinkle of powdered sugar adds sweetness and a delicate finish.
The lemon zest lends a mild citrus note that brightens these simple butter cookies without overwhelming. Their texture is lightly crisp yet soft enough to melt in the mouth. This recipe is straightforward, relying on quality butter and proper dough resting to ensure an easy-to-roll consistency and a classic cookie bite.
