Ingredients

  • 1 cup butter softened
  • 2 large egg
  • 1 teaspoon vanilla
  • ¾ cup granulated sugar
  • ¾ cup brown sugar firmly packed
  • 2-1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • 2 teaspoon espresso powder you can add more if you want a stronger flavor, or instant coffee powder
  • 1 cup chocolate chips
  • 1 cup Heath Brickle chips
  • ½ cup pecans or walnuts, chopped

Instructions

  1. Line cookie sheets with parchment paper or spray with non-stick cooking spray.
  2. Cream together butter, brown and white sugars, eggs and vanilla until fluffy.
  3. In separate bowl, combine flour, baking soda, salt, corn starch and espresso powder.
  4. Add dry mixture to butter mixture and combine well with mixer.
  5. Fold in chocolate chips, Brickle chips and nuts.
  6. Form into walnut size balls and place approx. 2 inches apart on baking sheets.
  7. Bake for approx. 10-12 min. or until browned. Lighter browned cookies will remain chewy while darker browned will be crisper.
