These Cauliflower Breadsticks are a low carb, gluten free alternative to regular breadsticks. This easy recipe can even be used as a pizza crust.

Ingredients
- 1 head cauliflower
- 3 eggs
- 1 cup of shredded cheddar or mozzarella cheese
- 1 teaspoon oregano
- ½ teaspoon garlic powder
- ⅛ teaspoon each of salt and pepper
- additional shredded cheese for cheesier topping
Instructions
- Preheat oven to 425 degrees F
- Cut cauliflower head into smaller pieces and pulse in a food processor. You want it to resemble rice.
- Place in a microwave safe bowl, cover and microwave for 10 minutes.
- Squeeze out as much water as possible using a cheesecloth.
- Add all other ingredients to a large bowl and blend well.
- Add cooked cauliflower to other mixed ingredients and mix well.
- Line 2 baking sheets with parchment paper
- Divide the cauliflower mixture in half and spread the baking sheets. I make mine into a rectangle shape. You want it to be thin.
- Bake at 425 degrees F for 25 minutes.
- If you'd like it a little extra cheesy, sprinkle with additional cheese and bake again until the cheese is melted.
Notes
- Nutritional information doesn't include the extra added cheese.
- You can also bake the cauliflower in the oven for 20 minutes at 375 degrees F.
- Be sure to squeeze all the water out of the cauliflower. Up to a cup of liquid is expected.
