Cauliflower Fried Rice

Looks and tastes exactly like fried rice! But so much healthier for you! Tastes amazing plain, or would also be great with some ham, chicken or meat added!

Ingredients
- 1 head cauliflower, about 2 ½ cups chopped
- 2 tablespoons sesame oil
- 1 chopped small white onion, about ¾ cup
- 1 cup frozen peas and carrots, thawed
- 2 eggs, lightly beaten
- 2-3 tablespoons soy sauce, more or less to taste
- 2 tablespoons chopped green onions

Instructions
- Rinse and chop the 1 head cauliflower, into florets and put them into a food processor. (If you don't have a food processor continue to chop the cauliflower into tiny pieces.) Pulse the cauliflower until it is small and resembles rice.
- Preheat a large skillet or wok to medium heat. Pour 2 tablespoons sesame oil in the pan. Add 1 chopped small white onion, 1 cup frozen peas and carrots, and fry until tender.
- Slide the onion, peas, and carrots to the side, and pour the 2 eggs, onto the other side of the pan. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetables.
- Add the cauliflower to the veggie and egg mixture. Pour the 2-3 tablespoons soy sauce, on top. Stir and fry the rice and veggie mixture until heated through and the cauliflower is tender. Add 2 tablespoons chopped green onions if desired.
