Cauliflower Polonaise

Cauliflower Polonaise is a roasted vegetable dish featuring tender boiled cauliflower florets mixed with butter, breadcrumbs, capers, and hard-cooked eggs, then baked until golden. The combination offers a creamy interior with a crisp breadcrumb topping and a subtle lemon and garlic brightness.

Description

This recipe begins by gently boiling large cauliflower florets with a lemon wedge, infusing slight acidity while softening the vegetable. After draining and drying, the cauliflower is combined with melted butter, part of the breadcrumbs, chopped hard-boiled eggs, capers, garlic, olive oil, salt, and pepper.

The mixture is transferred to a baking dish and topped with the remaining breadcrumbs mixed with butter, which crisps in a hot oven to form a golden crust. Fresh parsley sprinkled on top adds herbal freshness. The dish balances the mild flavor of cauliflower with savory, tangy, and crunchy elements.

Cauliflower Polonaise is typically served warm as a side dish, complementing roasted meats or as part of a larger meal offering a vegetable course with texture and acidity contrast.
